Little Big Guy

Jude will be 9 months old June 23! He’s just growing up so fast!

Jude has pretty much refused all baby food. He’s eating sandwiches these days. His favorites are peanut butter and jelly and turkey and cheese.

He’s also graduated to the “duck” tub in the big tub. He LOVES it!

His favorite past time is rolling all over the floor. He loves exploring all the toys left out everywhere by his brother and sister.

Tea Party

While Jamie and Mathias were away for the weekend, Analy and I had plenty of girl time. (Sorry Jude.) We played in her room most of the day. Analy got to pick a movie for movie night. Of course, the pink Barbie mermaid poster caught her eye. So we watched it…several times!

Analy's World

In Analy's world...

"Mama, when are you going to be finished putting out the buzz light year on the garden?"

"Mama, my lights won't come on. The rice crispy must be off."

Zucchini Muffins

Here’s another recipe we have enjoyed making lately. We had tons of zucchini from our garden. I shredded zucchini in my food processor and froze it in 1.5 cup portions.

Zucchini Muffins
Makes about 12 muffins

1.5 cups all-purpose flour
1/2 cup white sugar
1/2 cup packed brown sugar
1.5 cups grated zucchini (about 2 small to medium-size zucc’s)
1/2 tsp. salt
2 eggs
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1 tsp. vanilla extract (or vanilla paste)
1/3 cup canola oil
2 tsp. baking powder
Cinnamon and sugar for topping

1. Preheat oven to 375. In large bowl, whisk together flour, sugars, salt, baking powder, cinnamon, and nutmeg. Set aside.

2. In medium bowl, combine grated zucchini, eggs, vanilla, and oil. Stir well to combine, then gently stir into flour mixture. Be careful not to overwork this—it will lead to dense muffins!

3. Fill lined muffin tins about 3/4 of the way up with the batter and then sprinkle cinnamon and sugar on each. Bake for about 30 minutes or until golden.

Berry Berry Cool Pie

I think it is important to learn cooking skills early. I try to get the kids in the kitchen to “help” make something when I can. When the blueberries and blackberries are ripe we love making this recipe:
Ingredients
  • 1 can (14 oz.) Eagle Brand® Sweetened Condensed Milk
  • 1/2 cup lemon juice
  • 2 cups assorted fresh berries (raspberries, blueberries or blackberries)
  • 1 tub (8 oz.) frozen non-dairy whipped topping, thawed
  • 1 Keebler® Ready Crust® Graham Pie Crust
Directions
  • 1. In large bowl combine sweetened condensed milk and lemon juice.
  • 2. Stir in berries. Fold in whipped topping. Spread in crust.
  • 3. Freeze at least 5 hours or until firm. Let stand at room temperature for 30 to 40 minutes before cutting. Garnish as desired.

Happy 4th Birthday Mathias!

On Wednesday, June 6, 2012 Mathias James turned 4 years old!! I’ll go ahead and sound like everything mother, I can’t believe my baby boy is 4!

After gifts and breakfast, Mathias helped his Daddy worked bees. Noticed the bee gloves that Nana and Pop got him for his birthday.

I forgot to take my camera, but after working bees we all loaded up in the car and went to the park to ride bikes. After a hard work out, Mathias picked McDonald’s for lunch. After naptime, we all enjoyed some birthday cake. This year’s theme was spaceships.

Jamie and I aren’t big on birthday parties so this year’s treat was a trip to Kennedy Space Center. Mathias has been begging to “go see the spaceships” for months. Mathias thought he was big stuff going on a trip alone with daddy. Here he is in front of a rocket.

Mathias had a wonderful birthday week, getting spoiled by all his friends and family. We thank God for blessing us with this special boy. We love you Mathias!!!

The Mountains

The Mountains. This is how we have come to refer to our adventure to my Aunt and Uncle’s house in Sylva, NC. Our kids have never seen a mountain. Actually, they’ve never seen many hills! They were very excited at our first stop at the country store overlooking Tallulah Gorge.

After a long drive we finally made it to my Aunt and Uncle’s. It was nice to get out and do some hiking. Everyone needed a good walking stick.

There was a creek and waterfall near their house. We all loved splashing around and searching for critters.

Mathias wanted to slide down the waterfall so bad. It was tough to convince him that the rocks were hard and bumpy.

We drove up the Blue Ridge Parkway a bit to this overlook. What a crazy bunch! I think the thinner air was affecting their minds.
